According to wiki, tuque is a spelling unique to canada and only dates back to the 1870s.

In Breton it is spelt toque, toc or tok (depending on the era).

We use "colourful", first thing.

Tuque is the Breton spelling, which a lot of early coureurs de bois were and it stuck. Nothing like that has ever happened in British English, right?

The Toque, popular in Europe in the 13th century, around 6 (six) centuries before Canada was established, and then misspelt the word.
